Bean Tacos
This is an easy and tasty recipe, great for the whole family. It’s high fibre, nutrient dense and can easily be made gluten free and dairy free!
Ingredients
- 1 large red onion, finely sliced
- 2 garlic cloves, crushed
- Glug of olive oil
- Large jar of white beans (or 2 cans)
- 1 red capsicum, deseeded and diced small
- 40 g sundried tomatoes – they are very salty
Heat the oil in a casserole dish and add the onions and a good crack of salt, cook on a low to medium heat- with enough oil – for at least 10 minutes until they are soft.
Next add the garlic and stir for one to two minutes, being careful not to let it burn. Drain and rinse the beans and add to the pan with the capsicums and 250ml of water. Add the chopped tomatoes and cook for approximately 20 minutes, checking it continually as you might need to add more water. Turn off heat and pop a lid on top until serving later.
Serve with tacos, grated cheese, coleslaw, coriander, avocado, siracha and whatever else you feel like. Scoop of Coyo (coconut yoghurt) or sour cream to top.
