Zingy Cabbage and Mushroom Salad
This Zingy Cabbage and Mushroom Salad is a delicious gluten free, dairy free side dish for your next meal!
Mushrooms contain beta-glucans, which stimulate our immune cells to detect and destroy pathogens. They also contain probiotics to nourish our gut health and contain many anti-cancer properties.

Serves 4 as a side.
Ingredients
- Half a medium cabbage, finely chopped
- 1 punnet of mushrooms, peeled and chopped
- 2-3 tbsp Tamari soya sauce or coconut aminos
- 100ml olive oil
- Juice of half a lemon or whole lime
- 2cm piece of ginger, finely grated
- 1 garlic clove, crushed
- Small bunch of basil or coriander chopped
Place the cabbage and mushrooms in a bowl and sprinkle with the herbs. In a separate bowl whisk together the remaining ingredients, then pour on top.
If you are using leftovers for lunch, leave some of the cabbage and mushrooms undressed and add the dressing before serving the next day.
