Simple Turmeric Chicken
This Simple Turmeric Chicken recipe is easy to make and is full of beneficial nutrients.
Turmeric has been renowned as a healing powerhouse for thousands of years. Recent research shows it can help prevent cancer, Alzheimer’s and is a powerful anti-inflammatory agent.
Serves 2.
Ingredients
- 300g chicken breast
- 2 garlic cloves, finely chopped
- 1 onion, roughly sliced
- 1 large lemongrass stem, chopped into four pieces
- 1 tbsp coconut oil
- 1 cup of coconut milk
- 1 large bunch of french beans
- 1 1/2 tbs fish sauce
- 1 piece of fresh turmeric, chopped (no need to peel if organic)
- Coriander to serve
- 1/3 cup of brown rice (yields 1.5 cups of cooked rice)
Bring a pan of water to the boil and cook the rice according to packet instructions.
Place the chicken, garlic onion and lemongrass in a bowl and mix well, seasoning with a little salt and pepper. Place the coconut oil in a wok over high heat and add the chicken mixture, stir fry for a few minutes until cooked.
Add in the coconut milk and green beans and bring to the boil. Reduce heat and simmer for one minute. Add the fish sauce, fresh turmeric and stir for a further two minutes.
Remove the lemongrass stems and serve with fresh coriander and rice.
