Buckwheat Porridge
Buckwheat groats are the hulled seeds of the buckwheat plant and are naturally gluten-free. This Buckwheat Porridge is a great alternative for porridge for those who don’t tolerate oats.
This recipe is gluten free and dairy free.
Serves 2.
Ingredients
- 1/2 cup of raw buckwheat groats
- filtered water for soaking and cooking
- dairy-free milk of your choice
- toppings of your choice (berries, nut butters etc)
Soak the buckwheat groats (a gluten free seed) overnight in water.
This improves the absorbability of the nutrients and digestibility. It reduces ‘anti- nutrients’ which can reduce the amount of vitamins and minerals you absorb from the seed.
The next morning rinse the groats then place in a saucepan with double the water. Bring to the boil then simmer for 15-20 minutes on low heat or until the buckwheat is soft and plump.
Serve with berries, tahini/nut butter and your milk of choice.
