Turmeric Fish
This Turmeric Fish Recipe is great for a healthy dinner and features superfoods – ginger and turmeric.
Ingredients
- 2 pieces of firm, white fish
- 1 tsp of fresh peppercorns
- 1 long red chilli
- 3cm fresh ginger (roughly chopped)
- 3cm fresh turmeric (roughly chopped or 1 tsp turmeric powder)
- 2 tablespoons of fish sauce
- coconut oil for pan frying
- optional herbs – dill, coriander and basil all work well
Dipping Sauce
- 1 tablespoons fish sauce (or Niulife Cocomino Vegan Fysh Sauce)
- 100ml lime or lemon juice
- 1 tsp rice vinegar
- 1 tsp coconut palm sugar
- 1 garlic clove
Place turmeric, ginger, chilli, and peppercorns in a mortar and grind with a pestle to form a paste. Add fish sauce and 2 tbsp water. Pour marinade over fish and pop in the fridge, covered for approx. 2 hours.
In the meantime to make the dipping sauce, combine fish sauce, lime juice, rice vinegar and sugar in a small bowl. Stir until sugar dissolves, then add garlic and chilli. Pour mixture into individual dipping bowls.
When you are ready to cook the fish, melt coconut oil in a pan and pan fry fish on each side for approximately 4 minutes (depending on the thickness of fish fillets). Add a little extra coconut oil to the pan and throw in the chopped herbs (optional).
Remove fish and herbs with a slotted spoon and serve with spinach, dipping sauce and brown rice.
